A couple of years ago while dining in Lake George NY I ordered a gluten-free pizza that could have ruined my vacation.

Zucchini was listed as one of its toppings and when the pizza arrived, it was obvious that the zucchini slices had been breaded. I gave them the benefit of the doubt and started eating it, breaded zucchini and all, but had a sneaking suspicion that I shouldn’t be doing so. Sure enough, after a few bites and expressing my concern to the server, I found out that I was right: the chef had used gluten-free crust, but NOT gluten-free batter on the zucchini!

Disappointed and infuriated, I explained the gravity of the situation to the server. (While I am not gluten-allergic, I can experience symptoms the days after consuming gluten (an intolerance). There are millions who would have become very sick if they had eaten this pizza, I told her. She didn’t seem phased, but apologized and discounted that portion of the meal from the bill.

Fortunately, enzymes saved the day.
